Epicurian Heaven

I'm interrupting my week of random pictures to share the most delicious, heavenly peanut butter cookies I have ever had.

My daughter and I have come to conclusion (without any medical testing) that we are gluten intolerant if not very close to having Celiacs disease.

So with that in mind we have been eliminating gluten from our diets for the past week to see if our digestive issues clear up. Along the way, I have been searching out flourless, gluten free recipes for my sweet tooth.

These cookies below (picture borrowed from my daughter's blog - my camera battery died), are absolutely delicious, a little bit of heaven.

Now imagine these cookies with dark chocolate chunks in them.

Could you just die?????

Here's the recipe.

Flourless Peanut Butter Cookies

Cream 1 cup natural peanut butter with 3/4 cup sugar. Add 1 tsp baking powder and 1 egg. If you want chocolate in yours, add in 1/2 cup dark chocolate chips.
Roll into balls, flatten with a fork and bake for 10 minutes at 350 degrees.

I do agree, these cookies are absolutely delicious and with chocolate added...well, everything is better with chocolate!

Amazing how few ingredients can turn into such delicious cookies. I will have to try these. Thanks for posting the recipe. My husband's favorite cookie is peanut butter.
